When I think of Autumn Cocktails, I think of orchard fruits like apples and pears, scented spices like ginger, clove and anise, and best of all, the opportunity to concoct a seasonal treat to entice the palate and warm the soul. I once read that “sweater weather and rich cocktails go together.” So true, and now that the humid heat of summer has finally passed us by, let’s bundle up and sip on some fantastic cocktails that highlight the harvest and remind us why autumn is as rich in flavor as it is in color!
“Hats On,” I say, here’s to seasonal drinking! We’re brewing up the House-Infused Cider in our cauldron and dusting off the Dark Spiced Rum that matured in its wait for its favorite time of year. The ripened pears are cooking down to a perfect purée and the syrups are sweet and scented with ginger and spice. The tart cranberries reducing with sugars over the heat bring a tear to my eye; their cooked skins just ripe enough to create a stirring in the air not unlike the sound of the fallen leaves whisking around the cooler breezes outside. Cheers to Fall and all of its riches!
Yes, our days become shorter, our evenings creeping in like the encroaching Winter, but I still say “Hats On” all! I embrace you, Fall! I love your Harvests and your Moons and your Pumpkins of Halloween and your Feasts of Thanksgiving! I love your Oktoberfests and your Pumpkin Ales and your Hard Ciders! Most of all though, I thank you for providing us with your bounties, which allow us to create some of the best cocktails of the year!
My newest post-summer-blues remedy came to me yesterday as I walked around the kitchen smelling spices one by one: Allspice, Juniper, Clove, Cinnamon. My focus was to create a new Martini around the flavor of Pomegranate by adding fresh squeezed grapefruit juice and some sort of spice. All of these spices! They all seemed to go perfectly…and then…Star Anise; the way Sambuca warms your belly after a hearty Autumn dinner. That was my goal: to somehow incorporate the Star Anise’s licorice aroma and flavor into my Pomegranate Martini. The tests were not tedious or unsatisfying mind you as we continued to sip again and again, drink after drink. Perhaps the best part of the job is the conception of the creation! And then we did it. The perfect Pomegranate Martini to compliment my Autumn cocktail veterans offered each year. No fancy purées, no syrups or added sugars, just three flavors perfectly poured to welcome the Season and get us in the mood! Hats On! Let’s drink and be toasty! -Deborah
In a Shaker, Combine:
- 2oz. PAMA Pomegranate Liqueur
- 1oz. White Sambuca (I use Molinari)
- 2oz. Fresh Squeezed Grapefruit Juice
- 1oz. Pomegranate Juice (I use POM)
- Shake Well, Strain into Martini Glass
- Garnish: Star Anise Floater
