Asparagus & Peas The arrival of asparagus and peas for chefs is like budbreak for winemakers on Long Island. It denotes the beginning of a bountiful harvest of fresh, mouthwatering produce that feels long overdue after New York’s seemingly everlasting winters. Local asparagus is deliciously prepared in a risotto with seared local scallops or simply roasted.
