Winter -Citrus- The cold weather of the winter season focuses our chefs creations south. The warmer climate and dry season of Florida and the Caribbean produces ripe lemons, limes, navel oranges, grapefruit, pineapple, kiwis, mangoes, and coconut. These form the inspiration for menus items such as an organic field green salad with citrus segments and navel orange vinaigrette, long island fluke with citrus buerre blanc, 'carrot cake' with mango chutney, and coconut panna cotta with roasted pineapple jam, macerated kiwi and toasted coconut this winter.
